1 tablespoon vanilla extract
1 tablespoon peppermint extract
½ cup milk (vegan: soy/almond milk)
½ cup vegetable or canola oil
4 cups all-purpose flour
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 ½ teaspoons salt
7-9 drops green food coloring
1 cup chocolate chips
Instructions:
- Preheat the oven to 350 ◦F
- In a bowl, combine the butter, sugars, vanilla, and peppermint and cream together with mixer until light and fluffy (2-3 minutes).
- In a separate bowl, whisk together the milk and oil. Slowly add the mixture to the sugar mixture and mix to combine.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the sugar mixture and mix until dough forms.
- Add the green food coloring until preferred color.
- Add the chocolate chips and stir to combine.
- Scoop the dough onto a baking sheet, making tablespoon-sized balls. Leave 2 to 3 inches between each cookie and gently pat them down with the back of a spoon.
- Bake for 9 to 11 minutes, until the edges of the cookies begin to turn golden brown. Using a spatula, remove the cookies from the pan and set on a wire rack to cool.
