St. Patrick’s Day Recipe: Mint Chocolate Chip Cookies

To bring out the Irish in everyone, make these mint chocolate chip cookies and celebrate this great green holiday.

Ingredients:

1 cup butter (vegan: Earth Balance)

1 cup white sugar

1 cup lightly packed brown sugar

1 tablespoon vanilla extract

1 tablespoon peppermint extract

½ cup milk (vegan: soy/almond milk)

½ cup vegetable or canola oil

4 cups all-purpose flour

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 ½ teaspoons salt

7-9 drops green food coloring

1 cup chocolate chips

Instructions:

  1. Preheat the oven to 350 ◦F
  2. In a bowl, combine the butter, sugars, vanilla, and peppermint and cream together with mixer until light and fluffy (2-3 minutes).
  3. In a separate bowl, whisk together the milk and oil. Slowly add the mixture to the sugar mixture and mix to combine.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Add to the sugar mixture and mix until dough forms.
  5. Add the green food coloring until preferred color.
  6. Add the chocolate chips and stir to combine.
  7. Scoop the dough onto a baking sheet, making tablespoon-sized balls. Leave 2 to 3 inches between each cookie and gently pat them down with the back of a spoon.
  8. Bake for 9 to 11 minutes, until the edges of the cookies begin to turn golden brown. Using a spatula, remove the cookies from the pan and set on a wire rack to cool.
