Recipe One: Chocolate-Covered Strawberry Cupcakes

Ingredients:

Cupcakes:

  • 2 cups of all-purpose flour
  • 2/3 cup of cocoa powder

  • 3 eggs

Directions:

Step One: Preheat the oven to 350 degrees Fahrenheit. Add cupcake liners to muffin pans.

Step Two: Combine flour, cocoa powder, baking soda, and salt in a bowl.

Step Three: In a separate bowl, beat sugar and oil until combined. Then add in the eggs one at a time, mixing well after every addition. Once incorporated, add vanilla.

Step Four: Add the flour mixture alternatively with sour cream into the wet ingredient mixture until just combined. Fill each cupcake liner about halfway.

Step Five: Bake for 16-18 minutes. Allow the cupcakes to cool for five minutes in the pan before moving to a cooling grid.

Step Six: For the frosting, puree the strawberries. Strain the puree, discarding the seeds and solids.

Step Seven: Beat shortening and butter in a bowl until light and fluffy. Add in the powdered sugar one cup at a time until incorporated. The frosting should appear dry.

Step Eight: Add in the strawberry puree slowly. Beat until light and fluffy. Spread the frosting over the cupcakes.

Directions:
