Sweets are a staple with any Valentine’s Day celebration, and nothing is more special than a homemade treat made by someone you care about. Valentine’s Day is the perfect holiday to experiment with some new recipes. Cookies are a Valentine’s Day classic, and this collection of three Valentine’s Day-themed recipes is a perfect way to try some new recipes whilst also remaining in the festive spirit. These recipes range in difficulty and favor, so there is sure to be a cookie recipe perfect for your Valentine’s Day celebration.

Ingredients:

Cookie Batter:

  • 3 ¼ cups of all-purpose flour
  • 1 cup and 2 tablespoons of unsalted butter
  • 1 cup of white sugar
  • 2 eggs

Icing:

  • 2 cups of confectioners’ sugar (divided)
  • 1 tablespoon of lemon juice
  • 1 tablespoon of raspberry syrup

 

Preparation Time: 45 minutes

Cooking Time: 10 minutes

Additional Time: 4 hours and 20 minutes

Total Time: 5 hours and 15 minutes

Yields: 50 cookies

 

Directions:

  • Step One: In a large bowl, combine flour, butter, white sugar, and eggs. Continue to knead the mixture until a dough is formed. Shape the dough into a ball before flattening, covering with plastic wrap, and refrigerating for two hours.
  • Step Two: Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease or line two baking sheets.
  • Step Three: Dust a surface with flour before rolling out the dough until it has about a 1/4-inch thickness. Using a heart-shaped cookie cutter, cut out hearts from the dough and arrange the cookies on the baking sheets.
  • Step Four: Bake the cookies in the oven until lightly browned, about 10 to 15 minutes. Remove the cookies from the baking sheets carefully and immediately transfer them to wire cooling racks. Allow the cookies to cool completely, which should take about 20 minutes.
  • Step Five: For the icing, mix one cup of confectioners’ sugar with the lemon juice until a thick icing is formed. Mix the remaining one cup of confectioners’ sugar with the raspberry syrup until a thick icing is formed. Cover ½ of the cookie with the lemon icing and the other ½ with the raspberry icing. Let the cookies dry for about two hours, or until the icing is completely dry.

  • Cooking spray
  • 2 ½ cups of powdered sugar
  • ¾ cups of unsweetened cocoa powder
  • ¼ teaspoon of kosher salt
  • 4 large white eggs
  • ½ teaspoon of pure vanilla extract
  • 1 ½ cups of chocolate chips

 

Preparation Time: 10 minutes

Yields: 2 dozen cookies

 

Directions:

  • Step One: Preheat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper before lightly greasing with the cooking spray.
  • Step Two: Using a large bowl, combine the powdered sugar, cocoa powder, and salt.
  • Step Three: Stir in egg whites and vanilla. Add chocolate chips once the egg whites and vanilla are fully incorporated. For shiner cookies, allow the dough to rest at room temperature for 20 minutes.
  • Step Four: Scoop the dough into tablespoon-sized mounds and place them onto the baking sheets.
  • Step Five: Bake the cookies in the oven until fully cooked, about 10 to 12 minutes. After removing from the oven, let the cookies cool for about five minutes on the baking sheet. After five minutes, transfer the cookies onto a cooling rack so that the cookies may cool completely.

  • 36 shortbread cookies (round)
  • 2 cups of confectioners’ sugar
  • 1 cup of thawed frozen strawberries
  • 1 teaspoon of lemon juice
  • 2 ounces of cream cheese (softened)
  • 1 tablespoon of unsalted butter

 

Preparation Time: 20 minutes

Total Time: 1 hour and 20 minutes

Yields: 18 servings

 

Directions:

  • Step One: In a blender, puree the strawberries. Using a medium saucepan, whisk pureed strawberries, ¼ cup of confectioners’ sugar, and lemon juice over medium-high heat. After about 10 minutes and the mixture has thickened, set the mixture aside to cool.
  • Step Two: Using a medium-sized bowl, combine the cream cheese and butter. Once combined, stir in the remaining confectioners’ sugar. Add in the strawberry mixture and stir. Once combined, cover the mixture with plastic wrap and allow it to cool for one hour.
  • Step Three: Place one tablespoon of strawberry cream onto 18 of the shortbread cookies. Place the other 18 cookies on top. Allow the completed sandwich cookies to chill until ready to serve.
